Sabudana Khichdi

Sabudana khichdi is generally we eat in fasting.

It eats during fasting like Navratra, Mahashivratri, Chaturthi, etc. in Indian Pooja. Simple and light seasoned with spices.

Sago is made from tapioca/cassava plant. Sago has high calorific value due to the presence of starch and fat.

Making Sabudana Khichdi is so easy and tasty but making fluffy, perfect non-sticky is somehow tricky. It depends on how you soaked sago and how much time it should soak. There are many types of sago available in the market of different quality some take more time to soak and some take very less time to soak and some quality of sago even instantly we can use. So soak time is depends on what type of sago you have. So I am going to tell you in my recipe how to make perfect non-sticky Sabudana Khichdi, follow each step.

Sabudana Khichdi
Instructions
Soaking Sago
  1. Rinse sago in water 1 or 2 times.
  2. Then add 1 cup of water and soak it for 1 hour.
  3. Now drain sago, cover it with lid and soak overnight.
Making Sabudana Khichdi
  1. Heat 2 tablespoons oil or ghee in a non-stick pan or kadhai.
  2. Add chopped potatoes and allow cooking till golden color.
  3. Now add cumin seeds stir and add grated ginger.
  4. Then add curry leaves, chopped green chili. Sauté till 1-2 minutes.
  5. Add sugar, salt, lemon juice, crushed roasted peanut and mix them.
  6. Lastly, add soaked sabudana and mix it again.
  7. Cover it and cook till becomes translucent or cooked. Don't overcook it.
  8. Now Sabudana khichdi is ready to serve. Garnish with chopped coriander.Enjoy hot with curd.
Recipe Notes
  1. If you want to soak perfect sago then pick up soaked sago and smashed it between fingers if it separates out then it soaked perfectly.
  2. If it is not separated then add some water and soak it for 1 more hour. Suggest soaking overnight for good result.
  3. You can add 1/2 teaspoon black pepper powder.

Paneer tikka masala is made with paneer and spicy gravy. It’s Indian main course dish, which we can eat with Chapati, Naan or with Rice as well.

This is one of my favorite dishes, that’s what instead of order from restaurant why should not make it at home.I followed easy steps which can make dish easy and tastier. Believe me, it’s better than the restaurant and I did not add so many spices. So do not worry about acidity or stomach pain or something else. Its healthy and tasty recipe and I made for my husband on valentine day with surprise candle night dinner.

Paneer Tikka Masala
Instructions
Marinating
  1. In a mixing bowl, whisk a hung curd or u can use normal thick curd.
  2. Add ½ teaspoon garlic paste, ½ teaspoon ginger paste, ½ teaspoon red chili powder, ½ teaspoon turmeric powder and salt as per taste.
  3. Add 1 teaspoon lime juice and mix well.
  4. Now add paneer, cubed onion, cubed capsicum and mix gently.
  5. Cover it and let it marinate for 30 minutes.
Barbecue
  1. Preheat oven to 200 degree Celsius.
  2. Grease baking tray with butter. Place marinated Paneer tikka on a baking tray or arrange in skewers for barbeque, brush it with butter or olive oil.
  3. Bake for 200 degree Celsius up to 20-25 minutes. Check it meanwhile till it becomes golden in color
  4. If you do not have an oven, add 2 tablespoon butter or oil in a pan and place paneer tikka such a way that veggies can approach the frying pan.
  5. Flip the veggies and grilled it both sides.
  6. Or arrange the veggies on skewers and flip it. Grilled it both sides till golden in color.
Gravy
  1. Make a smooth paste of onions, garlic, ginger, tomatoes, cumin seeds, coriander seeds, cashew nuts in a mixer grinder.
  2. Heat 2 tablespoon oil in a pan and add bay leaf.
  3. Add smooth paste which we made earlier in the mixer grinder.
  4. When mixture leaves the sides then add chili powder, turmeric powder and salt as per taste. Sauté well, cook it for 1-2 minute.
  5. Now add 1 cup water, bring it boil at medium flame. Cook 3-4 minutes, If it will become thicken and you can see traces of oil then add Kasuri methi and cook it again a couple of minutes more.
  6. Add paneer tikka and veggies mix gently and cook it for 2 minutes.
  7. Now switch off the flame. Your Paneer Tikka Masala is ready to serve. Garnish with coriander leaves.
  8. Serve hot and Enjoy "Delicious Paneer Tikka Masala" with Roti, Naan or rice.
Recipe Notes

When you are going to do barbecue on the pan, keep medium-high flame and turn veggies 1 by 1 keep eye on every veggie.

Keep space between the veggies so that you can turn easily.

Crispy Masala Bhindi is a combination of tangy and spicy flavor. It can make with Indian spices which incorporate with Bhindi (Okra).

Crispy Masala Bhendi is one of my favorite side dish which can eat with Chapatis, Paratha or Dal-rice. It’s a very time-saving recipe. You have to make the preparation of marinating Bhendi or Okra. And as a result, it will take only 8-10 minutes to cook that’s it.

I have made this recipe with tempering (Tadka) but you can make this recipe by baking or deep frying. For this please check Recipe Notes. Also, you can make this by shallow frying little by little on high speed.

Crispy Masala Bhindi
Instructions
Marinating
  1. Rinse Bhindi or Okra in a tap water 2-3 times. And dry them with the kitchen towel and keep it aside.
  2. Cut head and tale first and cut them in half and make 4 pieces. As shown in fig.
  3. Take a mixing bowl add all dry spices, red chili powder, turmeric powder, garam masala, chat masala, salt and mix well.
  4. Then add cut and sliced bhindi or Okra in a mixing bowl and mix well. Add lemon juice, groundnut powder and mix it again.
  5. Now sprinkle gram flour and rice flour and coat it all over.
  6. Marinate Okra mixture for a ½ or 1 hour.
Tempering
  1. Take a non-stick pan or kadhai, heat 2 tablespoon oil.
  2. Add mustard seeds, let it crackle and then add cumin seeds.
  3. Then add curry leaves, asafetida, red chili, and stir.
  4. Now add sliced green chili give a quick stir.
  5. Lastly, add marinated okra in a kadhai mix and sauté for 7-8 minutes. And you all have done.
  6. Sprinkle some coriander and "Crispy Masala Bhindi" is ready to serve. Enjoy "Tangy Crispy Masala Bhendi" with chapatti or naan.
Recipe Notes

If you want crispier, you can just dip fry marinated okra or can bake it.

  1. For baking okra, preheat oven to 180 degree Celsius. Spread marinated okra on the greased baking tray. Brush some oil on the top of okra and bake it for 10 minutes at 180 degree Celsius or till the okra become crispy and golden in color.
  2. You can just do preparation (marinating) before and keep it in the refrigerator overnight. It will save your time.
