Corn Palak is the best combination in curry. As we know spinach is highly nutritious and contains iron. It helps to give immunity and power. Corn is a Cereal Grain. Corn kernels contain calories, vitamins, fiber, and carbohydrates.

This recipe is a variation of Palak Paneer but I keep it easy. So it is easy to make and nutrients will remain same. Generally, spinach has to make a smooth paste but instead of it, I am using directly chopped spinach. Use less salt as per you are using in regular Sabji.

Instructions
  1. Rinse the spinach in water 2-3 times.
  2. Chop the spinach and keep it aside.
  3. Heat oil in a pan over medium-high flame.
  4. Add mustard seeds, let it crackle. And add cumin seeds.
  5. Now add chopped or grated garlic, dried Kashmiri red chili, and chopped green chili.

  6. Then add chopped onion cooked until become translucent.
  7. Add sweet corn kernels and saute.

  8. Add chopped tomatoes. Cook till becoming soft.

  9. Now add red chili powder, turmeric powder, and salt. Mix well and cook until 1 minute.
  10. Lastly, add chopped palak and mix well.
  11. Cover it with lid. And cook for 5 minutes.
  12. Corn Palak is ready to serve. Serve hot with rice or roti.
Recipe Notes

Add less salt as compare to other curries to avoid saltiness.
